Zucchini Muffins
Ingredients
- 1 cup zucchini, grated
- 1/4 cup cheddar cheese, shredded
- 1/4 cup breadcrumbs
- 1 large egg
- 1/4 onion, diced
- salt and pepper to taste
Directions
- Preheat oven to 400˚F. Spray a muffin tin with cooking spray.
- Remove the excess water from the zucchini with paper towels, then combine all ingredients in a blender and mix to obtain a smooth and thick paste. Spoon the mixture into the muffin tin.
- Bake for 15-20 minutes or until tops are golden. Use a plastic or rubber spatula to remove the muffins from the tin and serve warm or cooled.
