Zucchini Muffins


  • 1 cup zucchini, grated
  • 1/4 cup cheddar cheese, shredded
  • 1/4 cup breadcrumbs
  • 1 large egg
  • 1/4 onion, diced
  • salt and pepper to taste


  1. Preheat oven to 400˚F. Spray a muffin tin with cooking spray.
  2. Remove the excess water from the zucchini with paper towels, then combine all ingredients in a blender and mix to obtain a smooth and thick paste. Spoon the mixture into the muffin tin.
  3. Bake for 15-20 minutes or until tops are golden. Use a plastic or rubber spatula to remove the muffins from the tin and serve warm or cooled.
