Roasted Garlic Zucchini Soup Recipe
Despite zucchini’s amazing ability to adapt to various cuisines and really bring in added flavor, the vegetable is not as popular as some of its cousins. This soup shines a light on the amazing zucchini and brings out its true flavors with a little roasting.
Ingredients
- 5 cups roasted zucchini
- 4 cloves garlic, roasted and minced
- 1/2 cup milk
- 1 tbsp flour
- 4 cups chicken broth
- 1 tsp salt
- 1/2 tsp cumin
- 1 tsp paprika
- olive oil
Directions
- Place all ingredients except for olive oil and chicken broth in blender and mix until smooth.
- Heat olive oil in heavy pot and add blender mixture, mixing quickly.
- Add chicken broth and allow soup to simmer on low heat for 20 minutes.
