Asparagus Feta Frittata
Ingredients
- 5-10 asparagus spears
- 3/4 cup milk
- 2/4 cup feta cheese
- 4 eggs
- 1 Tbsp cornflour
- seasoning
Directions
- Heat the oven to 425°F.
- In a blender, add the cornflour, milk, 1/4 cup cheese and eggs and mix at low speed until you obtain a thick paste. Add the seasoning and mix again for a few seconds at low speed.
- Line a 8″ x 8″ baking pan with baking parchment and pour in the egg mixture. Lay the asparagus spears in the mixture and top with the remaining cheese.
- Bake for 20 minutes or until the pie is firm and lightly golden. Serve warm or cold!
