Asparagus Feta Frittata


  • 5-10 asparagus spears
  • 3/4 cup milk
  • 2/4 cup feta cheese
  • 4 eggs
  • 1 Tbsp cornflour
  • seasoning


  1. Heat the oven to 425°F.
  2. In a blender, add the cornflour, milk, 1/4 cup cheese and eggs and mix at low speed until you obtain a thick paste. Add the seasoning and mix again for a few seconds at low speed.
  3. Line a 8″ x 8″ baking pan with baking parchment and pour in the egg mixture. Lay the asparagus spears in the mixture and top with the remaining cheese.
  4. Bake for 20 minutes or until the pie is firm and lightly golden. Serve warm or cold!
